Mango Orange Dreamsicles

It’s hot, damn hot, real hot.

I know we should expect this heat nonsense every year.  It is, after all, summer.  But what’s a girl to do when she’s craving ice cream?  I have the answer…Mango Orange Dreamsicles.  The mango and orange keep it sweet and the coconut milk keeps it creamy.  The kids and the sugar addicts in the house will never know these are not only dairy free, but added-sugar free.

PS:  I miss Robin Williams.

Mango Orange Dreamsicles

(Yields 6-8 pops)
Course Sweets/Desserts
Cuisine NSNG, Paleo, Vegetarian

Ingredients
  

  • 2 mangoes, peeled, cored, and cut into cubes
  • 2 oranges, peeled and deseeded
  • 1/2 can coconut milk/cream (Use half of a 14 ounce can, full fat, never boxed coconut milk)
  • 1 cup water

Instructions
 

  • Purée all ingredients in a Vitamix or other strong blender about 60 seconds, or until very smooth. Pour into popsicle molds, freeze 4-6 hours. Serve.

  • Yum yum and yum. Just bought two small mangos, not the large kind. So will be making these soon.
    Think we will make in ice cube trays and do instant chopping in a food processor for a sorbet kind of treat. Would these be great in a gluten free waffle cone.

      These really set up better as pops. You could do them as sorbet if you only freeze for an hour or two, or else they will set up too hard. I want that GF Waffle cone!!

    What size can of Coconut milk or how many ounces.

    • Use a 14 ounce can of full fat coconut milk (with no sugar added). Do not use boxed coconut milk.

  • Made without the oranges because I didn’t have any. They are a hit!!
